Not often served on it's own, but instead used as an ingredient to enhance soups, stock, and pots of beans, adding a smoky, meaty, and rich essence.
For best results and to add more flavour, roast the hock before making stock.
There is still a surprising amount of meat on the hock.
Can also be smoked.
